Chocolate-Covered Matzah Balls
Description:
A delicious but deceptive dessert (for Passover or all-year round)!
Ingredients:
2 1⁄2 c potato (mashed)
1 lb confectioners sugar (powerderd)
3⁄4 c crushed matzah (2 full matzah)
3⁄4 c chopped pecans (optional)
1 pk (14 oz) coconut
2 pk (16 oz. each) chocolate (preferably dark)
Instructions:
Cook and mash potato. [Note: Do not make/use "mashed potatoes."] Combine ingredients (except chocolate) and roll into small balls. Chill for an hour or so. Melt chocolate and dip matzah balls in chocolate coating. Place on parchment paper to set. Makes 4-5 dozen (depending on how big you make them).
*The amounts listed for the matzah and nuts are estimates. The amount needed varies based on the consistency of the mixture. It should not be too crumbly or the mixture will not stick together.
*The "3 hours" indicates the total amount of time - including the time when the mixture is chilling.
Notes:
This recipe can be made without Matzah and used any time of year.
