Cowboy Stew Oneg Size (AKA 24-Can Stew)
Description:
Savory ground beef and vegetables in a tomato-herb base. This oneg-size recipe fills a 17-quart cooker. Prep time is about 30 minutes, cook time is one hour and it can be held overnight on warm.
Ingredients:
5 lb kosher ground beef
2 c dried minced onions
2 1⁄2 t black pepper
5 t salt
5 tbsp italian seasoning (basil, marjoram, thyme, rosemary, oregano, sage)
1 c ketchup (heinz is kosher)
2 c red cooking wine, or regular wine plus 1 tsp. salt
2 cn diced tomatoes (28 oz cans)
10 cn sliced potatoes (15 oz cans)
12 cn vegall (15 oz cans), or huge sam's club-sized bag (maybe 3-5 pounds?) frozen mixed veggies
1⁄4 c grandma's brand original unsulphered molasses (brand is kosher)

Brown ground beef, onion, salt and pepper. Transfer to 17-quart cooker. Open all 24 cans and dump them into the cooker, do not drain. Add remaining seasonings and the molasses below, and bring to a boil. Lower heat, cover, and simmer till liquid is reduced to desired consistency, about an hour. If making for morning oneg, bring to a boil and lower to 200 degrees F(so as not to boil on the Sabbath) and hold overnight.
Notes:
This is called Cowboy Stew because it was first made at a BI camping trip in an iron pot over a camp fire. The original recipe added refrigerated biscuit dough on top after it had come to a boil. If you want to do that, bring it to a boil, top with the biscuit dough, cover to keep in the heat, and continue to cook until they are done, about 15 or 20 minutes. It works best if there is some headroom between the biscuits and the cover. If you can handle the weight, you could also transfer the pot to the oven to finish it off with biscuits uncovered. You'll want to cut through a center one to be sure it isn't doughy. It will be spongey on the bottom due to the steamy heat, but not stringy or doughy.
I do not recommend putting biscuits on top if serving the next day at oneg as they will turn to mush. Also, if topping with biscuits, consider whether your guests separate meat and milk when choosing the biscuit recipe. Of course, the addition of biscuits means it is no longer wheat-free.
