Latkes
Description:
The traditional potato pancake served during Chanukah
Ingredients:
1 pk frozen shredded potatoes (thawed)
1 c chopped onion
1⁄4 c flour (depending on how juicy potatoes are)
1 t salt
1⁄4 t pepper
3 eggs (could use up to 6)
Instructions:
Heat 1/4 inch deep olive oil (or peanut oil or other vegetable oil) till a potato shred dropped into the oil sizzles (or use an heat an electric frying pan and heat to 375 degrees F). Form patties about 2-3 inches in diameter (a large serving spoon works well). Carefully slide each patty into frying pan, taking care not to splash hot oil. Fry latkes until brown on both sides. Drain on paper towels. Serve with applesauce or sour cream.
Notes:
* You can substitute the frozen potatoes for 9 cup fresh, shredded potatoes, rinsed in salt water and drained. (This can be done ahead of time. Refrigerate in a strainer inside a bowl to allow it to get its weeping over with)
* You can substitute the fresh onion with 1/4 c. onion powder or 1/4 cup dried, chopped minced onion.
